Spiced Roasted Chicken and Rice in Ginger Broth

It’s been a harsh winter, a very tough start to the New Year. Making chicken soup is hardly going to fix the world but it does help! Cooking helps me move from one moment to the next, when sometimes all I know is to do just that; take it moment to moment.



I decided to go with Asian influences for this recipe and would describe it as being somewhere between Chinese Hainanese Chicken and Filipino Arroz Caldo.


The recipe is in development and despite a few adjustments that need to be made, what resulted was a very comforting bowl of food.
