Egg Salad Spears | Fridge Cleanup Day

It’s fridge cleanup day and here’s what I made from the remaining ingredients.


Crunchy egg salad spears using the last egg I had in the fridge. Mix with a squeeze of Kewpie mayo and a few shakes of onion powder. Sprinkle with freshly ground salt and pepper.



  • The egg is jammy, boiled for 6 minutes in a shallow pan of water

  • Remove from the water and peel when cool enough to handle

  • In a bowl, add the egg, mayo, and onion powder

  • Mash together with a fork

  • Spoon in to the lettuce spears

  • Season with salt and pepper


You could also add jarred olives and fresh, diced red onion but because we are working with what is available, this mini recipe gets an assist from the pantry in the form of dried seasonings.
