Itlog na Maalat at Kamatis - Filipino Salted Duck Egg and Tomato

A single egg and tomato are gently mixed with a spoon, allowing the natural richness of the egg and the acidity of the tomato to season one another.



Traditionally prepared as a side dish, this no-cook recipe becomes a light lunch when served over rice.



Salted duck egg comes ready to eat, in individual vacuum sealed wrapping. Unlike a boiled egg, salted duck eggs are not peeled. Rather you cut through the shell with a knife and scoop out each side with a spoon.


What you’ll need:

  • 1 salted egg, chopped

  • 1 small tomato (or, 1 Roma tomato)

  • 1 cup steamed rice

  • Green onion for garnish



Seriously, that’s it. No fish sauce or soy sauce needed. No salt and pepper either as the ingredients are inherently salty and the tomato brings a brightness in its juice.


The trick, which is not really a trick, is to stir the egg and tomato, allowing the tomato to marinate the egg with each rotation of the spoon.
