
Kimchi Fried Rice with Spam and Egg

Leftover rice is given new life in this one-pan, stir fry recipe with Kimchi, Gochujang, Spam, and fried egg on top.

As usual, I’ve eyeballed the measurements. This yields 2 servings.
Ingredients:
1 jar of Kimchi, about 11oz
1 to 1.5 cup cooked rice
1/2 can of SPAM cubed
1 spoonful Gochujang
2 spoonfuls of soy sauce
1-2 green onions sliced, reserve half for garnish
1 egg

Start a pan with a spoon or two of cooking oil, heat on medium for 3 minutes
Next, add the items one over after the other.

Add the cubed SPAM to the hot oil and cook for 3-4 minutes. Toss every minute or so throughout the cooking time so all sides get caramelized and toasted on all sides.
Add the rice and soy sauce, stir and cook for about a minute to warm up.
Add the Kimchi, juice and all.
Create a well in the center of the rice and Kimchi mixture. Add the Gochujang and mash with a spoon to melt because it is a sticky ingredient to work with and takes some effort to loosen up.

Mix into the rice until it is coated in the beautiful red color of the Kimchi and Gochujang
Cook for another 5 minutes before plating
In a separate pan, heat up oil for 3 minutes on medium low. Crack one egg and let cook one side for 3 minutes into the egg white turns opaque in color.
