Breakfast nourish bowl

Bowls, bowls, all type o' bowls. Also known as the Buddha bowl, nourish bowls are filling and the best part is, they're made with fresh, healthy ingredients.
This one's a tropical, breakfast version with plantains, fried egg over quinoa and greens. Not only is it a good idea to fill your belly with something warm first thing in the morning, this packs the protein you need to get through the day.
Here's what you need:
1 scoop cooked quinoa
1 handful of greens (spinach, baby kale)
Small handful of cherry tomatoes
1/2 avocado
1 egg (over easy or sunny side up, it's really up to you)
1/2 medium-sized plantain
Cooking oil (I like avocado or coconut oil)
Drizzle with as much Sriracha and Kewpie mayo as you want
Garnish with green onion if you're feeling fancy
Here's what you do:
Make a pot of quinoa according the directions. Make enough for 1 bowl, or enough for the week for other recipes.
Halve and slice your avocado
Peel and slice the plantains at a diagonal
Over medium heat and a light coating of oil, shallow-fry the plantains. About 2-3 minutes per side until crispy.
When both sides are done, transfer to a plate lined with paper towel
Next, fry your egg.
Plating:
Start building your bowl - there's no wrong way to do this!
On one side, lay down a bed of greens. Dot with cherry tomatoes.
On the other, add a scoop of quinoa.
Place the egg over the quinoa.
Add plantains
Fan out the sliced avocados and place to one of the bowl
Drizzle your choice of sriracha, mayo, or even ketchup if that's your style
