One banana pancake

Please, no more banana bread! What to do with that banana you’ve ignored for too long? Pancakes! Gotta love the 1:1 ratio of egg to banana in this recipe which makes it MUCH easier to measure in the kitchen. And the darker and riper the banana, the better because with no added sugar in the recipe you want that banana to be SWEET! Blueberries are a bonus.
What you need:
1 egg
1 overripe banana
Handful of blueberries
1 tbsp flour
1 tsp baking powder
What to do:
Ina bowl, peel and mash the banana with a fork
Crack and beat 1 whole egg in the same bowl
The banana and egg mixture can be runny, so add the flour a little at a time until the batter gets to thicker consistency.
Add baking powder to fluff up your pancakes
Heat your pan to medium
Add a thin layer of oil
Drop a tiny dot of batter into the oil to test the heat. If it sizzles and bubbles up, you’re ready to cook!
This recipe makes about 6 mini-sized pancakes. Spoon the batter into the pan. You can fit 3 pancakes at a time.
Add blueberries to each cake
Cook for 2-3 minutes and flip
Cook for another 2-3 minutes
Repeat the process for your last set of hot cakes
Plate and serve with butter and syrup
